I know what you’re thinking: There is no way on earth that quinoa can make its way into a pancake. When I saw the recipe for quinoa pancakes, I was genuinely confused — don’t get me wrong, I’m always down to try some weird substitute, but this seemed too weird.
After finding a recipe that looked sufficiently easy for quinoa pancakes, courtesy of The Fitnessista (same), I got to work.
Recipe for four quinoa pancakes:
- 1 1/2 cups cooked quinoa
- 1/2 teaspoon baking powder
- 2 eggs
- 1/4 teaspoon vanilla
- 1/4 teaspoon cinnamon
- 1 teaspoon honey
- Pinch of sea salt
To make the pancakes pumpkin chocolate chip flavored, add pumpkin pie spice and chocolate chips to the recipe.
First, you’ll have to measure out the 1 1/2 cups of cooked quinoa. I used a blend of red and white that I had leftover in the fridge, but anything should work.
Hello and happy snow day! We hope you’re all still in your PJs, enjoying the fruits of Juno. In honor of the ridiculous amount of snow, we decided to make a ridiculously indulgent breakfast. Okay, maybe it should be called dessert, but you’re not my mom and you can’t tell me what to do!!!
What better way to pay homage to the snow than by dousing some Funfetti pancakes with flurry-like vanilla frosting and sprinkles? Below is the recipe, adapted from Tastes of Lizzy T’s.
(Makes 22 5″ pancakes, but we halved the recipe.)
- 1⅓ cup white flour
- 2 teaspoons baking powder
- 2 tablespoons sugar
- ½ teaspoon salt
- 1 box Pillsbury Funfetti cake mix
- ⅓ cup canola oil
- 3 eggs
- 2⅓ cups milk
- ⅓ cup sprinkles
- Store-bought vanilla frosting (you could make your own if you’re feeling up to it!)
National Pancake Day is finally here! To celebrate this delicious day, IHOP is back with its annual Free Pancake Day. Unlike the Spring Weekend lineup posted earlier today, there is absolutely no catch to this! The only request they have (besides pay for your drink) is to make a donation for Children’s Miracle Networks Hospitals. If this interests you, I recommend going early because the line gets ridiculous later into the evening. But it’s totally worth it even if you do have to wait. Ditch the Ratty, grab a couple friends, and be a philanthropist for an evening while enjoying free pancakes!
